During the crisp Midwest winter months, cozy comfort food takes center stage, and it can be fun to find comfort combos to mash up. Familiar comfort favorites make the house smell wonderful and warm our souls.
Baked Midwest comfort food with a twist
Many homes have been employing the slow cooker for stew, or making big pots of soup or chili. All of those are solid choices when it’s really cold. Combine them with some homemade baked bread and you're winning winter. Sometimes though you want to get a little creative in the kitchen in the winter months.

Behold, The Midwest chicken lasagna! A combination of chicken pot pie, chicken noodle soup, constructed lasagna-style. Check the pantry and fridge to make sure you have the ingredients. If your rushed trip through the store to get staples earlier this week didn’t include these items, put a reminder in your phone, get the recipe here, then plan to create a potential new family comfort treasure.
Like any recipe, you can sub in alternate items if you are inspired, or remove something if you know you have a picky eater in your home. Chicken, vegetables, lasagna noodles, cheese and creamy sauce are your starting pieces. You could incorporate spinach (like in the video), or maybe you prefer working in some pesto. It's up to you. Homemade bread is a fantastic and purposeful side, but biscuits work nicely here too. However you decide to put it together, get cozy with chicken lasagna in these cold stretches in the Midwest.
