Kansas City barbeque is different from other regions and cities barbeque profiles, but it brings many things together, employing a thick and rich sauce to any manner of meats including introducing the world to “burnt ends”. Memphis leans into pork ribs with a complex dry rub. But if you want those ribs wet in Memphis, they’ll brush it on before smoking and also after. East Carolina whole hog uses a vinegar based sauce, and West Carolina (Lexington style) rolls with pork shoulder and a mix of tomato and mustard sauce. The Central Corridor of Texas flexes on beef (especially brisket) served with a dry rub and no sauce.

Yelp! asked reviewers to rate top cities for barbeque. Kansas City came in third, behind number 1 Austin, Texas and number two. San Antonio, Texas. The rest of the top ten included Memphis (4), Charleston, South Carolina, Then Greenville, South Carolina, Honolulu (???), Tulsa, Oklahoma, Durham, North Carolina and Nashville (10).
